Grilled scallops with peanut and spring onions

Servings 2 people

Ingredients
  

  • 6 scallops , in shell
  • 2 spring onions
  • 2 tbsp unsalted peanuts
  • pinch salt

Instructions
 

  • Start by making the peanut and spring onion topping.
    Toast the peanuts on a hot pan for about 2-3 minutes. Remove from heat and let it cool.
    Finely slice the spring onions and place in a heatproof bowl.
    Add to the spring onions, 2 tbs of neutral flavoured oil and place in the microwave for 20 seconds. Remove and mix to stir the oil around.
    Roughly chop the peanuts. Add the peanuts to the spring onion with a pinch of salt and stir.
  • Turn on your oven grill.
    Lightly pat the scallops dry with a paper towel.
    Then oil the scallops. Place the scallops under the grill, top rack for 90 seconds. Remove and let cool slightly.
  • Add the peanut and spring onion on top and enjoy.
